Nicolas Haelewyn fell into a caramel pot when he was a child. After ten years at Ladurée and many trips that opened his mind, he opened his boutique-tea room around his favourite ingredient. Karamel Paris is a place of unique conviviality where the key words are greed and simplicity. Why do you have this passion for caramel?

For me it is highly suggestive of childhood. It is greedy and regressive. Everyone around the world is unanimous about it, we all love caramel!


What is your sweet temptation?

French toasts! Salty, sweet, toasty, hot, topped... it's my second passion, after ... caramel!


What is your favourite product in your Box Of Chef?

If I have to choose one product in this selection I would pick the karamel spread, because it can be used in various ways. You can melt it, use it soft, spread it on bread, on waffles, on French toast, you can make flambé bananas ... we can really have fun with it!


Do you have a message for the Box Of Chefs?

Well first of all it's the Box you need to remember the most among all the boxes of the moment!

Make the recipe for the famous Karamel spread, vanilla and fleur de sel from Nicolas Haelewyn.

Recipe for 2 small pots


130 g of sugar

60g of butter

50 g of cream

1 g of fleur de sel

1 vanilla pod


Make a caramel dry. In a saucepan over medium heat, put about 1/3 of the sugar. Leave to brown slowly and then add 1/3 of the sugar again and let caramelise, stirring gently with a spatula. Add the last third and caramelize the whole.

Infuse the vanilla in the hot cream and then "deglaze" the caramel with it (watch out for splashes).

Anneal the mixture for about 1 minute, and then add the butter and the fleur de sel.

Reserve at room temperature.

Rinse in small pots and close.

Our advice: use directly on toast, pancakes, waffles or a soft brioche!
